The Zundert 8 Tripel is slightly "unruly," according to the monks! A special beer that needs time and serenity to be properly appreciated. It is bottle-conditioned and has a floral and sweet start, evolving into caramel palates that balance with the mild bitterness of the hops. In the finish, which is long, the bitterness merges with a pleasant, slightly spicy flavor. Try tasting it at 5ºC and continue the tasting up to 12-14ºC; be surprised by the evolution of the beer. About the beer

The Zundert 8 Tripel Trappist has a very promising aroma with notes of herbs and spices. In these herbs, which typically grow in the vicinity of the abbey, you can literally taste the environment that the monks call “home.” The beer has a floral and slightly sweet start. If you give the beer enough time while sipping it, you will see its character evolve into a smooth caramel with a dry finish. In the aftertaste, the bitterness of the hops combines with a pleasant, slightly spicy flavor. The Zundert 8 Tripel Trappist has an intriguing deep amber color and 8% ABV.

Zundert 8 undergoes bottle refermentation, so you should store the bottles upright so that the yeast sediment settles at the bottom. When serving, open the bottle carefully so as not to disturb the yeast. Serve Zundert Trappist in its own chalice, which allows the aromas to be fully appreciated.

Zundert Trappist is best enjoyed at a temperature of 10 – 14 ºC. This is ‘cellar’ temperature, which is higher than what we are used to for beer. Served at this temperature, you will be able to fully appreciate the passion with which the monks produce their beers. This does not mean that they taste unpleasant straight out of the fridge. On the contrary, at 5 – 7 ºC, Zundert 8 becomes a very easy-drinking beer, precisely because of its sweet start and slightly bitter finish.

Pairing: Peking duck, goat cheeses, grilled tuna, spicy Southeast Asian food, Boerenkoolstamppot (mashed potatoes and kale, a traditional Dutch meal), mussels.

Zundert has been produced since 2013 at the Trappist Abbey of Maria Toevlucht and is only the 2nd Trappist brewery in the Netherlands. With an annual production of just 5,000 hL, it is one of the smallest active Trappist breweries to feature the “Authentic Trappist Product” seal on its bottles. Its hazelnut-colored beers are produced under the supervision of the monks and according to the Benedictine rule of “Ora et labora.” They should be savored with time and serenity.
