Oitava Barrica – Aging, Territory, and a Passion for Beer
Discover the world of the “Oitava Barrica” program, an innovative craft beer aging project conceived by Oitava Colina.
In an excerpt from an interview given by Sérgio Romão to RCLourinhã, the founder of Oitava Colina reveals the behind-the-scenes creation and production of this extraordinary beer, now in its 2nd edition:

“Time, tasting, and listening to what the beer has to tell us. These were some of the essential ingredients for creating a unique beer with a connection to the land of the dinosaurs.”

Oitava Barrica was born from a desire to explore new flavor frontiers through aging in chestnut barrels that once held the prestigious Aguardente DOC Lourinhã, from the Adega Cooperativa da Lourinhã.
The challenge was issued by Sérgio Romão to the Lourinhã cooperative, which responded by sending two 250-liter chestnut barrels to Lisbon in January 2022. After fermentation, the beer was carefully placed in these barrels to evolve for nine months.
The chosen recipe was an imperial stout, recognized for its intense roasted malt flavors and coffee notes, harmonizing perfectly with the characteristics of Aguardente DOC Lourinhã.
After two and a half months of fermentation, nine months of barrel maturation, and two weeks of carbonation, the beer is ready for the glass, offering an excellent gastronomic experience.
This project, the result of a partnership between 8.ª Colina and the Adega Cooperativa da Lourinhã, launches a collection of distinctive beers: “Oitava Barrica.” The first beer aged in Aguardente da Lourinhã barrels is about to hit the market, promising to surprise connoisseurs and the curious alike.

The 2025 edition, available at Syndicato, was aged for 10 months in the Lourinhã Cooperative’s barrels.
