The result of a collaboration between Fermentage, where brewmaster Jorge Tomé continues to surprise, and Kin Ferments, led by chef João Alves, a master in the art of koji, this unique project was born, exploring the richness of rice fermentation. The batch was divided into four very distinct interpretations; Kojo Koji is a version with equal parts Koji rice and Pilsner malt. It is a Saison with low bitterness and the complexity of rice fermentation microorganisms.

About the beer
Using rice transformed by *Aspergillus oryzae* fungi, a mash was created together with pilsner malt to highlight the rice fermentation process. A neutral fermentation was used to allow the grains to convey their aromatics.
The batch was divided into 4 versions:
Kojo – a version with equal parts koji rice and pilsner. Low bitterness and complexity from the rice fermentation microorganisms.
Hanagumori – an infusion of sencha green tea and cherry blossoms. Known as Sakura in Japan.
Kofu – a blend of Thai spices inspired by Tom Kha Gai soup: coconut, kaffir lime, galangal, lemongrass, and chili.
Suifu – the heat and freshness of wasabi highlight the citrus profile of the Yuzu.
The idea is to explore aromatic variations, complementing the profile.
Each version has approximately 250 bottles of 37.5cl available.
