About the beer

Dois Corvos, founded in Lisbon in 2016, is one of the essential benchmarks of the Portuguese craft scene — and the Ooooh Big Stretch is a clear example of their technical mastery in the world of NEIPAs. This 5.5% ABV New England IPA was designed to be approachable in strength without sacrificing aromatic complexity. There is a cause behind the name. The Ooooh Big Stretch was born from the Animal Shelter Adopt Program, in partnership with Cadela Carlota — a shelter in Lagos with about 80 dogs and 60 cats waiting for adoption — and The Collab Bar, also in Lagos. Each beer in the series highlights an animal. Bonita was the first.

The NEIPA style is defined by American hops and, in this case, by intense dry-hopping performed after fermentation, a technique that preserves the volatile aromatic compounds of the hops without oxidizing them. In the glass, aromas of mango, passion fruit, and citrus dominate. On the palate, the body is medium-soft, the carbonation is fine, and the bitterness remains discreet.

Pairing: It pairs by complement with grilled herb chicken, whose herbal notes mirror the hops. By affinity, wraps with guacamole and cilantro share the tropical notes. By contrast, fresh cheese highlights the beer's creaminess. The fine carbonation works by cleansing with vegetable or shrimp tempura, refreshing the palate after each bite of fried food.
