About the beer

Cantillon Rosé de Gambrinus is the result of a blend of lambics and raspberries. It is a beer with a slightly acidic, fruity, and fragrant flavour. Like the Kriek, the "fruitiness" of the Rosé de Gambrinus reaches its peak when the beer is young. With age, the lambic takes the upper hand at the expense of the fruit component, which becomes less expressive.

The raspberries are from Serbia, and the fruit is blended with lambic that is on average 20 months old, at a ratio of 200 g of fruit per litre of beer. As raspberries are delicate, it is necessary to select a lambic that is mild and subtle so that it pairs well with the fruit. After being steeped for two to three months, the lambic has extracted all the colour, fragrance, and flavour from the raspberries. At this point, it is blended with one-year-old lambic, which provides the sugars necessary for secondary fermentation in the bottle. Only fresh fruit is used and, as is the case with wine, Cantillon beers can be referenced in terms of vintages. The prevailing weather conditions have a major impact on the ripening and quality of the fruit, which is why the flavour of the brewery's fruit-based beers will be slightly different from one year to the next.
