About the beer

Cantillon Rosé de Gambrinus is the result of a blend of lambics and raspberries. It is a beer with a slightly acidic, fruity, and fragrant flavor. Like the Kriek, the "fruitiness" of the Rosé de Gambrinus reaches its peak when the beer is young. With age, the lambic takes precedence at the expense of the fruit component, which becomes less expressive.

The raspberries come from Serbia, and the fruit is blended with lambic that is on average 20 months old, in a proportion of 200 g of fruit per liter of beer. Since raspberries are delicate, it is necessary to select a lambic that is mild and subtle so that it pairs well with the fruit. After being steeped for two to three months, the lambic has extracted all the color, fragrance, and flavor from the raspberries. At that point, it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle. Only fresh fruit is used and, as is the case with wine, Cantillon beers can be referenced by vintage. The prevailing weather conditions have a major impact on the ripening and quality of the fruit, which is why the flavor of the brewery's fruit-based beers will be slightly different from one year to the next.
