About the beer
The organic sour cherries used to craft this Kriek come from Turkey. Fresh fruit is blended with lambic, which has already aged for an average of 20 months, at a ratio of 200g of fruit per litre of beer. As the cherries have a very pronounced flavour, it is necessary to select a lambic that has enough character to pair well with the fruit. After macerating for two to three months, the lambic has extracted all the colours, fragrances, and flavours from the cherries. At this point, it is blended with lambic that is about a year old, which provides the sugars necessary for secondary bottle fermentation.
Much like wine, Cantillon beers that result from blends with fresh fruit are always different from year to year. Climatic conditions influence the aromas and palates of the raspberry and cherry harvests. You may find vintage editions of this type of beer.
