About the beer

Brasserie Cantillon’s lambics are considered “young” after 1 year of aging in oak barrels and reach their peak maturation at the end of 3 years. The young beers provide the natural sugars necessary for the second fermentation in the bottle, and the three-year-old matured beers contribute their bouquet and refinement to the blend. Cantillon Gueuze Lambic Bio is thus the final result of a complex blend of several lambics with different years of aging in oak barrels. The beer’s maturation happens slowly and naturally. When lambic beer gains carbonation, we get the famous Gueuze. The master brewer tastes and selects about 12 beers of different ages and barrels and, from those, chooses between 5 to 6 to produce Cantillon Gueuze. Every year, the beer produced is slightly different from the previous year; the spontaneous evolution of each of the beers makes it impossible to control and create beers that are exactly the same with each production. This edition was bottled in Dec. 2022 and can be stored for 20 years or more.

In the 18th century, a Benedictine monk named Dom Pérignon discovered the champenoise process by blending different non-sparkling white wines. About a hundred years later, a brewer in the Belgian Brabant blended several lambics, resulting in a secondary fermentation in the bottle, and Gueuze was born!
