Several years and fermentations in a single bottle! In the 18th century, a Benedictine monk named Dom Pérignon discovered the champagnisation process by blending different still white wines. About a hundred years later, a brewer in the Belgian Brabant blended several lambics, resulting in a secondary fermentation in the bottle. The Gueuze was born!

About the beer

Lambics produced at Cantillon are considered “young lambics” up to one year of maturation, and are only considered to have reached full maturity after 3 years. Cantillon Gueuze is the final result of a complex blend of several lambics of different ages. The master brewer selects and tastes about 12 beers of different ages and barrels, and selects 5 to 6 to produce Cantillon Gueuze. Each year the beer that is produced is slightly different; the spontaneous evolution of each of the beers makes it impossible to control and create exactly the same beers with each production.
