Dire Wolf is the NEIPA from Basqueland Brewing, a Basque brewery founded in 2015 in Hernani, known for its intensely hopped and visually dense recipes. Built on a lager malt base with wheat and oats, which provide the haziness and silky body characteristic of the style, it is hopped with Mosaic in the whirlpool and then double dry-hopped with Nelson Sauvin, Strata Cryo, and Mosaic again. The result is an intense bouquet of mango, passion fruit, white grape, and grapefruit, over a resinous and slightly earthy base. At 6.5% ABV, the bitterness is firm but not overpowering—it remains juicy and fresh until the finish. Serve chilled, between 6-8°C, in a tulip glass to concentrate the aromas. At the table, it pairs by complement with spicy dishes, fish tacos, or Asian cuisine, whose spiced character echoes the tropical tones of the hops.
