About the beer

Dominion was born on the same occasion as Aura, the first edition of the Fresh Festival, but with a different purpose: to go further. Madrid’s Oso Brew Co. teamed up with the Catalan brewery Messorem to build an 8.4% ABV DIPA with great aromatic ambition and a dense structure.

Five hops define its character: Sabro brings coconut and peach; Simcoe adds pine and tropical fruit; Mosaic reinforces blueberry and exotic notes; Idaho 7 contributes ripe stone fruit; Riwaka closes with grapefruit and lively citrus. The result is a beer with an intense aroma and overlapping layers, featuring a silky body and a firm bitterness that anchors the entire structure. The finish is long, resinous, and persistent.

Pairing: Dominion's intensity calls for dishes with character. With a dry-aged beef burger and aged cheese, the bitterness cuts through the fat by contrast, and the tropical fruit complements the sweetness of the meat. With pepperoni pizza or spicy sausages, the affinity with the spices is direct. With intense hard cheeses like an aged Manchego or Pecorino, the beer's silky body balances the salinity. It also pairs well with roasted nuts, where the resin and bitterness find a natural affinity.
