About the beer
Founded in 2009 by Pierre Tilquin in Bierghes, in the Senne valley, the gueuzerie sources wort from four of the greatest houses in the Pajottenland: Boon, Lindemans, Girardin, and Cantillon. The lambics undergo spontaneous fermentation in their own oak barrels for one to three years before being blended and subsequently refermented in the bottle for a minimum of six months. The average production time is two and a half years.
The recipe is precise: 60% malted barley and 40% unmalted wheat, with aged hops — devoid of conventional bitterness, serving only as a preservative. The result is a gueuze with a fresh lemon citrus nose, an acidic and dry palate yet with a roundness that makes it accessible, and a light bitterness from tannins derived from young barrels.
The 2022-2023 vintage has 7.0% ABV and 14 IBU. At the table, it pairs perfectly with fresh oysters — the acidity cuts through the salinity and cleanses the palate between bites. With aged goat cheese, the lactic affinity is direct. Smoked pork charcuterie creates a contrast with the acidity, balancing fat and salt. As a digestif, the dryness and fine carbonation cleanse the palate after a heavy meal.
