Kaze was born from a collaboration between brewmaster David Santos and Himitsu Sushi Bar to celebrate the restaurant’s 10th anniversary. More than just a celebratory beer, it was designed as an extension of the Himitsu dining experience: delicate, precise, and Japanese-inspired, yet built with a clear connection to the Portuguese territory. The fermentable base includes Portuguese Carolino rice—a contemporary interpretation of a Japanese Rice Lager that provides a clean and elegant texture. Salicornia adds a mineral and saline touch, while yuzu brings citrus freshness and a unique aromatic dimension. With 25 IBU and 6 EBC, it is a beer of balance, precision, and harmony at the table.
