About the beer

Miso Schizo is the more contemplative side of Dois Corvos. Produced at the brewery in Marvila, Lisbon, it is an Imperial Stout aged in bourbon barrels with the addition of miso—the Japanese fermented soy paste condiment, rich in umami. The result is a beer that defies categories and invites reflection. At 10% ABV, the alcohol is present but integrated. The aroma opens with chocolate and bourbon, followed by wood and the fermented notes of miso. On the palate, the body is full and velvety, with caramel and chocolate sweetness that balances with the savory umami and the warmth of the barrel. The finish is long, warm, and complex—each sip reveals a different layer. Food pairing: Miso Schizo’s intense, multidimensional profile calls for worthy companions. With high-percentage dark chocolate, the cocoa affinity creates a perfect complementary pairing. With aged blue cheeses, the contrast between the saltiness of the cheese and the sweetness of the bourbon balances both. It also works as a digestif after a roast meat dinner, or with caramel and nut desserts—where the beer’s wood and umami fully reveal themselves.
